Gluten-free, dairy free bread sticks

My boys love bread sticks and I've never really found an easy-to-roll out version for the kid who's gluten and dairy free. I'm a bit proud of this. It's my own invention, it only uses four ingredients - and IT WORKS! 

I use a Thermomix but you could do it in a good food processor too.

Here it is:

Gluten-free, dairy-free bread sticks

40g whole linseeds

170g brown rice flour

70g tapioca starch

approx 170g water

Whizz the linseeds in the Thermomix for 20 seconds on speed 8. In a food processor, get them going good and fast until they've been reduced to flakes.

Add the rice flour and tapioca starch. Mix all the flours together.

With the Thermomix going on speed 6, (or medium speed in a food processor) pour in the water slowly until a dough is formed. It should be about the consistency of play dough.

Turn the dough out onto the kitchen bench. Prepare a tray lined with baking paper. Put a few teaspoons of olive oil into a bowl and lightly wipe the oil over your fingers. Break off 1 inch balls from the dough. Each ball is the basis for your breadstick.

Gently roll the balls into consistent, even snakes under your hands. If the dough begins to stick too much, wash your hands and then reapply the oil.

Brush the sticks over lightly with the remaining olive oil and sprinkle on some coarse salt. Bake at about 180C for 25-35 minutes, or until they are as hard as you like.

You could also create pretzel shapes with this dough.
