Autism. Hedgehog slice
I think I can confidently say that we have yet another new food that Bright Eyes will eat. Drum roll please.... for..... Nuts!
There is one small drawback - he will really only eat them in hedgehog slice, but I'm not too unhappy. I also managed to get some LSA mix (linseed, sunflower and almond meal) into the batch we made today. That's more Omega 3 and 6. And anything is better than nothing - even if it is mixed with butter and sugar and cocoa.
Recipe for hedgehog slice:
125 g butter melted together with 1/2 cup of sugar and a few tbsps of cocoa. About 2 cups full of crushed whatever. We used gf-cf cereal and then added nuts like cashews, walnuts, almonds and macadamias and had a great time smashing it all up in a bag with a rolling pin. When you mix it into the warm butter and cocoa mix, add a beaten egg, press into a pan and refrigerate. Yummy yummy.
One day I'll try a version with mushed up dates instead of sugar, and a nut butter instead of the butter. However, I'll take it slowly and add small amounts of these things so that the taste stays fairly consistent for him.
